A QUICK INTRO

Pinikipikan is a controversial dish from the Cordillera Administrative Region. It involves a chicken being beaten slowly before it is torched then cut. During this documentation, the owners didn't kill the chickens the "traditional way." They had opted to slit the chicken's throat instead of slowly killing the chicken by beating it with a stick. The preparation of "pinikpikan" is tied to many rituals in the Cordilleras and also a staple food during festivals and special occasions.
